The baking of coffee beans
 
Heating the green beans, the starch of the green beans transforms into sugar and acidity material, cellulose and other material, carbonize water and carbon dioxide volatilize, protein transform into enzyme and fat, and the residual material combine together in the end, the oil film layer will appear on the surface of the beans, so the green beans change to dark drown beans.
